During the last 35 years Fattorie Giacobazzi has enlarged its assortment of vinegars and condiments that has traditionally accompanied the family for centuries. The first authorization received by the Giacobazzi farm dates back to the middle of the last century.

use & care

Traditional Balsamic Vinegar is best with Parmesan cheese, strawberries and is delicious in salad dressing with extra virgin olive oil. It is particularly good with roast or boiled meats and also a great alternative as a non-alcoholic digestive.

production & design

The production process involves cooking in open vats, the natural fermentation and acetification of the cooked must, and annual transfers between barrels during the slow aging process. The handsome packaging includes; an information booklet (with recipes), special spout for serving and Certification DOC (Registered Designation of Origin) and DOP (Protected Designation of Origin).

Traditional Modena Balsamic Vinegar is the result of very specific environmental conditions in the area of Modena and the types of grapes grown there. After the grapes are crushed and before fermentation, the "must" is cooked and reduced as much as 30% to 50%. After decantation, the cooked "must" undergoes natural fermentation and bioxidation. This is followed by the Producers's unique maturing stage, transferring the product to a series of barrels of different woods.

During the very important ageing stage, the vinegar's characteristics develop and reach perfection. The "must" goes through a series of barrels, made of Oak, Chestnut, Mulberry, Cherry and Juniper. Each type of wood imparts imparts different characteristics: tannin-rich Chestnut darkens its color, Mulberry speeds up its concentration, Juniper gives it resinous tang, Cherry sweetens its flavor and Oak imparts a unique vanilla fragrance.

  • Materials: 100% cooked "musts" of traditional Modena grapes, mainly; Trebbiano and some Lambrusco, Spergola and Berzemino.
  • Ingredients: Free flowing, yet dense bright brown color. The aroma has a lingering, a penetrating bouquet, with noticeable acidic undertones. Well balanced sweet and sour flavor, velvety, intense and lingering.
  • Technical Specifications: 100 ml. distinctive round bottle with rectangular base, numbered seal in place."Extravecchio", with a minimum of 25 certified years matured in wood barrels.
