The beloved casserole, with its slowly baked, comfort food flavor, originally descended from French cuisine (the word casse means “pot” in French). In France, this type of cooking is so popular and cherished that an endearing nickname was created for it: cocasse or cocotte, which means "little hen."
This cocotte can be used on the stovetop (both gas and induction burners), and in the oven or microwave. It is safe to be placed in the freezer and can be washed by hand or in the dishwasher.
This pot is made in Alsace, a historic center for ceramic cookware in northeastern France, by Terre Etoilée, a company with a history that reaches back to 1830. The traditional handmade plaster molds have been replaced with the latest in high tech machinery for consistency and uniformity, but the deft hands of skilled artisans are still required for finishing, polishing and glazing.
Rendered in heavy-duty ceramic and finished with a classic red glaze, this 4-quart casserole pot features a unique lid design for more aromatic, flavorful meals. A pattern of small knobs or bosses attract the condensation and moisture droplets that are naturally depleted from stewed, braised, or slow-cooked recipes, returning these flavorful juices back into the food. Ergonomic handles take the pot from oven or stovetop to table with ease. The ceramic construction, fired at extremely high temperatures for thermal shock resistance, ensures heat distribution for even cooking.
