Made from naturally porous clay, this hardy ceramic grill maintains an even temperature all throughout cooking. An outer water reservoir keeps the grill from getting too hot. The reservoir also catches oil and fat drips from the slightly inclined grill grates to decrease smokiness that usually occurs when fat is directed onto a flame. The grill is handmade using clay collected from the mountainous province of Iga, in Mie Prefecture, Japan. The company has been in existence since 1832, and has been run by the same family for over eight generations.
Use only on the stovetop. Not suitable for induction cooktop, microwave, electric stove or dishwasher. Hand wash only. Basic Grilling Instructions: 1. Set the grill body (the lower portion) over the gas stove top. Fill the outer reservoir 80% full with water. Set the top grill pan on the grill body. 2. Heat the grill for about five minutes over high heat. Turn the heat down to medium. Brush the grill top with oil to prevent ingredients from sticking. Add your ingredients. 3. When the water level of the reservoir becomes too low, fill with more water. In order to keep the grill top from burning with residual marinade, juices and other food remnants, wipe it with wet paper towel as necessary. How to take care of your grill: To clean the smoker, use mild soap with lukewarm water. Once cleaned, make sure to dry the pot upside down. Always make sure the entire grill is dry before cooking. A wet grill might cause a crack in the pot when heated. Do not subject to sharp temperature changes in order to avoid cracks. Do not soak the grill in water for more than 30 minutes. Make sure the grill is dry before storing it, as dampness will cause mold to grow on the grill. The grill gets very hot during and after cooking. Use pot holders, oven mitts or other suitable protection for handling with caution. Do not slide the grill on the table or other furniture, as it could scratch the surface. Do not place hot grill on tabletop.
