The founders behind these teas travel the world—from London to India to Japan to Mexico and back—to source their organic leaves and spices. They use only whole tea leaves, extracting out the “fannings,” or the dust, which are considered of a lower quality. The ingredients are then blended in small, controlled batches in their New York storefront in Greenpoint, Brooklyn. The blends, with their evocative titles, relay the time and place that the founders are transported to when drinking the teas.
National Parks Dept. combines Darjeeling 2nd Flush, one of the most celebrated Indian teas, and Roasted Kukicha, made with roasted tea stems from Japan. It’s a woodsy, comforting blend of organic Indian and Chinese black teas paired with juniper berries, Douglas Fir evergreen tips and wild flowers. The brew is amber-colored with a mellow flavor.
Store tea in its stainless steel traveler caddy (or in an airtight container) and keep away from heat, moisture and direct sunlight.
Quantity: 1 heaping teaspoon per 8 ounce / 250 ml
Water Temperature: 195ºF / 90ºC
Bring fresh, cold spring water to a boil, remove from heat and set aside for 30 seconds to 1 minute. Add tea to water. Brew for 4-6 minutes.
For iced tea, a stronger brew is needed, as flavor is constricted when cold. Add 2 teaspoons of tea per 8 ounces of hot water. Allow brew to come to room temperature, then place in refrigerator to fully cool (the hot tea will get cloudy if immediately placed into a cold environment).
Founders Heidi Johannsen Stewart, Michael Shannon and Scott Stewart travel the globe to find tea leaves and spices for their organic, hand-blended teas. Through their journeys, they learned much about the history, tradition and methods behind tea drinking and steeping in various regions of the world. The tea blends are unique to their New York atelier, but their aromatic flavors are meant to evoke times past and places visited. The company even has a children’s tea, “Little Dickens,” flavored with chocolate, mint and cinnamon.
