The art of sabrage was first initiated by Napoleon’s army, as they battled and traversed through the area near Champagne, France. Triumphant soldiers thirsting for a celebratory drink of champagne would grab a bottle while still on horseback, then use their sabers, or knives, to hack off the top. Made in Maniago, Italy, a city renowned for its steel blade production since the 15th-century, the six-inch blade has an American Iron and Steel Institute (AISI) grade of 420, the highest cutlery steel available. The upswept blade is hand-polished for precision, with an angled handle and finger hook to safely facilitate the art of sabrage. The streamlined black handle is made of a unique post-consumer waste paper, called paper stone. Instead of the usual aluminum rivets widely used in the knife manufacturing industry, the paper stone handle of this knife uses stainless steel, contributing to the lasting duration of the knife for many bottles of bubbly to come.
Hand wash in warm water and dry thoroughly immediately after cleaning. To preserve the stainless steel blades, store the knife in its cardboard box.
Made in Maniago, Italy, this sabering knife comes from a history of steel blade production dating back to the medieval 1500s. Due to its proximity to Venice, the old blacksmiths of Maniago were permitted to use the streams to cool and cut their steel during tool production. The company that produced and designed this champagne knife was founded in 1912, specializing in farming tools. In 1952, after four generations of tool making, the family business decided to concentrate solely on knives for the home kitchen and professional butchery. Since then, it continues to innovate and improve its products. Recent innovations include knives fitted with “paper stone” handles - such as this champagne knife - made of post-consumer waste paper.
