Caviar Avancé is sustainably farmed White Sturgeon caviar from Northern California. Aged at least 90 days and regularly rotated in its original tin, the eggs re-absorb their natural oils, creating a sweet and fresh fragrance with a taste that's rich, yolky, delicate and lingering. Its beads are medium-sized, uniformly round, and firm, grey in color, ranging from a tawny hue to dark grey.

Sustainably sourced from the roe of the White Sturgeon (Acipenser transmontanus). White Sturgeon is native to the Pacific Northwest, inhabiting the coast from Monterey, California to the Gulf of Alaska.
