THE STORY

We admit it—we’re drawn to good puns like bees to honey. But there’s more to love about Let It Bee Honey than its Beatles-inspired name. For one thing, it’s completely natural and chemical-free, a combination that makes for an all-around better taste. Secondly, it’s not heat-treated after being collected from hives in New York City and its northern suburbs, so allergy sufferers get homeopathic benefits from eating it—and, frankly, a tablespoon of honey a day sounds a lot better than massive doses of antihistamines. Incidentally, that old saying about being a busy bee? It’s all true. A bee will visit about two million flowers to make one pound of honey. Since setting up their first hive in 2004—with 60,000 honey bees and one queen—beekeepers Charles Branch and Christine Lehner have kept things entirely organic, which means this honey sampler is 100 percent pure. “Watching as the frames of beeswax filled with pure honey spun in the extractor, and then as the golden honey poured out, we were filled with delight at the ingenuity and diligence of the bees,” says Lehner. “We knew this was what we wanted to do together.”
